    Tonight I'm making Oysters Rockefeller. Not to be one of the FancyAssersons but because I've got all the fixin's, including some fresh oysters I found on sale yesterday. I like raw oysters but my husband doesn't. It's my compromise thingy.
    I like Oysters only if there cooked,preferably on the BBQ grill.

    I have a wonderful girlfriend that doesn't cook much,but makes
    killer deserts that Iam very happy with.She does cook other stuff
    when she puts her mind to it,and has learned allot watching me.

    Not that Iam chef of the year...but I love to cook!

    Iam lucky that I don't weigh 600lbs (walking.walking walking, lol)

    I made pork chops tonight, but I'm still disappointed with my Valentines meal. I tenderized the hell out of that steak, and it was still tough. And it looked like a good cut too. Sigh. My husband enjoyed it anyway, the carnivore he is.

    Mamma, two words:

    Allegro Marinade. Stab the steak with a fork, stick it in the Allegro for a few hours in the fridge and turn it a couple times.

    I've turned the cheapest steak tender with it.

    It's great to mix with beef gravy and cook a roast in, as well.

    The other day I made something called "Really Good Cheddar Soup" out of a Cook's Illustrated magazine. Oh. My. God. It was superb! Real restaurant quality stuff. We were having ANOTHER snow storm here, and nothing hits the spot for lunch like home made soup. In fact, nothing is more cozy than a warm kitchen on a cold day, making something special for your loved ones. I served it with crusty Italian bread, and there wasn't one drop left over.

    Left-overs tonight,chicken stir fry.

    Tomorrow's menu.

    Fish Taco's!!!

    1 quart vegetable oil
    12 corn tortillas
    1 cup all-purpose flour
    2 teaspoons salt
    1 cup beer (not dark)
    1 pound cod fillet, cut into 3- by 1-inch strips
    Shredded lettuce
    Sour Cream
    Avocado slices
    Chopped or sliced radish
    Red or green salsa
    Lime wedges


    Then...

    1.Preheat oven to 350 degrees F.

    2.Heat 1 inch oil in a 10-inch heavy pot (2 to 3 inches deep) over moderate heat until a deep-fat thermometer registers 360 degrees F.

    3.Meanwhile, separate tortillas and make 2 stacks of 6 each Wrap each stack in foil and heat in oven 12 to 15 minutes.

    4.While tortillas warm, stir together flour and salt in a large bowl, then stir in beer (batter will be thick). Gently stir fish into batter to coat. Lift each piece of fish out of batter, wiping any excess off on side of bowl, and fry fish in batches, turning once or twice, until golden, 4 to 5 minutes. Drain on paper towels.

    5.Increase oil temperature to 375 degrees F and refry fish in batches, turning once or twice, until golden brown and crisp, about 1 minute. Drain on paper towels.

    6.Assemble tacos with warm tortillas, fish,and accompaniments.

    These are really good!

    last night we had campbells creamy chicken and rice casserole. i got sick of seeing how good it looked on the commercials and made it, MMM. very good.

    tonight will be cajun fried shrimp and corn!

    In-N-Out....I'd know it anywhere, even without the papers. I miss it sooooo much! But was in So.Cal. a couple of weeks ago and got a fix. Honey had never had it.....now he knows that "that's what a hamburger's all about!"

    Tonight's not gonna be anything great. Chicken and spinach pasta. But last night we went for Japanese/hibachi. Steak and shrimp with a healthy dose of chef's personality! Loved it.
