Carnitas to rival Chipotle, tacos, cilantro lime rice, and chips with salsa. Oh, and cake. Red velvet cake.

My mouth is watering just reading this. I hope its yummy!!!

I think I'm making steaks unless I can think of something else to do with the filets. I've got a new wok that I need to break in, so I may troll the net today looking for good recipes.

Leftovers, baby! Spaghetti always tastes better the next day. I'll have to scrounge up something for lunch, though. Perhaps a tuna sandwich. I keep seeing these commercials for Wendy's ghost pepper fries. My Uncle loves spicy stuff. I might get the stuff to try and make something like that this week.

My lettuce and cherry tomatoes had gone bad so I didn't have a tossed salad. I had extra popsicles, which didn't bring me up to specs with my diet/exercise journal.

The black forest ham and turkey breast sub was awesome, and I ended up eating most of the foot, at just 700 calories, with like 148 to spare. So I did good.

Best part of having Mexican food is having a taco salad the next day.

I wanted tacos, then Sissy came home from a dining smelling like a Mexican restaurant and I kind of lost the desire. She didn't smell bad, but who want to sniff Taco purfume? All kinds of no.

I am having all kinds of cravings. I'd kill someone for a hot Krispy Kreme right now. Unfortunately they closed them all down around here years ago, the closest one is in Des Moines, which is I think a 4 hour drive and I'm not quite that desperate. Yet.

I'm also dying for some carnitas from Chipotle, or a pizza from Parkway Pizza, but the only thing open at this hour is McDonald's and Taco Bell and I'm lazy so I'm settling for a chicken pot pie. Hopefully I can get something good tomorrow. I love Chioptle and could probably eat there every day it's just always so damn busy, it's like draining to go get food there.

My mom is not feeling so great today. So I think we will do dinner later this week when she feels better. Today my uncle and I are grilling. I have some morning star garlic and quinoa veggie burgers I'm going to try. I took out a pork tenderloin that I'll put in the crock pot tomorrow. Seasoned with rosemary, garlic, and thyme. My Aunt and Uncle love some pork tenderloin. lol

Today has been a sleepy day, and I just did not want to bake a tater. So ate the chili and saltines. I have turkey burgers thawing in the fridge that I will eat Monday night if they are ready for the pan.

We went to the Mother's Day brunch at the Hilton this morning. It was alright. Drank my weight in mimosas. From the buffet we started with fruit and then went to crab claws and boiled shrimp. Then cheeses and salad and rosemary/basil muffins. Then we had salmon and white fish with some mac n cheese and mashed potatoes. Finished with two kinds of cheesecake, a dark chocolate turin and apple streudel.

Went to get a pedicure afterward and this was the first time I attempted to take my dog Munchie with me anywhere. He's a registered "comfort dog," so they have to allow him in anyplace I go. He did really good! Everyone at the salon loved him. Then took him into Tuesday Morning with me and again, he behaved really well. I think the biggest test will be how he does in a restaurant.

I ended up making hash browns, too, because I had some leftover 'taters that needed using up. Cubed 'em and fried 'em up in butter with salt, pepper, paprika, and a pinch of garlic. "I hate to say somethin' mean about store-bought hash browns, Momma, but yours are WAY better!" So sayeth Miss E.

Picked up some baby back ribs from Chili's last night because Munchie was out of bones. Tonight I think I'm grilling burgers. I'm making a trip to Costco in a bit and they have this potato salad that is perfect with burgers. The weather is perfect for fixing dinner outside. High 70s during the day.

No clue. I'm on my own. Hubby's taking his momma out to dinner, Schmoo went to Dairy Queen with the future Mrs. Schmoo (or so he calls her), and Miss E went out with her former foster parents to the park and dinner.

When I was in jail, neither Hubby nor his mother could keep her because they each had an open charge for drug possession at that time. My family is all on the Kansas side except for my brother, who could barely look after himself after being hit by lightning three times, much less a seven-year-old. Schmoo was in a residential therapeutic facility, so he was allowed to just stay put.

We got extremely lucky, the foster parents who got her are wonderful Christian people. They took amazing care of her, and still see her from time to time when they are in town. The day after Miss E came home, they moved from Missouri to Louisiana. Their adopted son's birth mother lives near me, so whenever they bring him up to visit, they swing by and see Miss E. She is a very lucky girl who has four parents who love her very much.

Momma just said we are having a Breakfast Supper so I am a happy little clam. Well, maybe not that little.
